Delightful Shrimp Lobster Cheddar Bay Biscuit Pot Pie


Ingredients

  • Medium or large shrimp, peeled and deveined
  • Fresh lobster meat
  • Cheddar Bay biscuit mix
  • Peas
  • Carrots
  • Corn
  • Onions, chopped
  • Butter (2 tablespoons)
  • Flour (2 tablespoons)
  • Seafood or chicken broth (2 cups)
  • Heavy cream (1 cup)
  • Salt
  • Pepper
  • Garlic powder
  • Cayenne pepper
  • Fresh herbs (parsley or thyme)
  • Milk or water (for biscuit mix)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add chopped onions, carrots, and any other vegetables you’re using. Sauté for about 5-7 minutes until they are tender.
  3. Stir in the shrimp and lobster meat, cooking for another 3-4 minutes until the shrimp turn pink and opaque.
  4. Sprinkle 2 tablespoons of flour over the seafood and veggies, stirring to coat. Gradually add 2 cups of seafood or chicken broth and 1 cup of heavy cream. Stir continuously until the mixture thickens, about 5 minutes.
  5. Season the filling with salt, pepper, garlic powder, and a pinch of cayenne for a little kick. You can also add fresh herbs like parsley or thyme for added flavor.
  6. Pour the seafood mixture into a 9-inch pie dish or a similar-sized baking dish, spreading it out evenly.
  7. In a separate bowl, prepare the Cheddar Bay biscuit mix according to the package instructions. If using a homemade mix, combine flour, baking powder, garlic powder, shredded cheddar cheese, and butter until crumbly, then add milk or water until just combined.
  8. Scoop large spoonfuls of the biscuit dough over the seafood filling.
  9. Place the pot pie in the preheated oven and bake for 20-25 minutes or until the biscuits are golden brown and the filling is bubbly.
  10. Once done, remove the pot pie from the oven and let it cool for a few minutes before serving.
