This Garlic Herb Butter Beef Tenderloin Roast features a perfectly seared crust and juicy interior, coated with garlic and fresh herbs.

- 1 (3 to 4 lb) center-cut beef tenderloin, trimmed
- 1/2 cup unsalted butter, softened
- 6 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme leaves, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon Dijon mustard
- 2 teaspoons kosher salt
- 1 teaspoon freshly cracked black pepper
- 2 tablespoons olive oil
- Butcher’s twine (if tying the roast)
Instructions
- Trim the beef tenderloin of any silver skin and excess fat. Tie with butcher’s twine at 1–2 inch intervals.
- Let the tenderloin rest at room temperature for 30–45 minutes.
- In a bowl, mix softened butter with garlic, rosemary, thyme, parsley, Dijon mustard, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the tenderloin on all sides, 2–3 minutes per side.
- Transfer to a roasting rack in a pan and coat with the garlic herb butter mixture.
- Preheat oven to 425°F (220°C). Roast until internal temperature reaches desired doneness: 130–135°F for medium-rare.
- Remove and tent loosely with foil. Rest for 15 minutes.
- Slice, garnish with herbs or butter, and serve.
