Ingredients

Scale
  • 1 box Instant Pistachio Pudding Mix
  • 20 oz Crushed Pineapple (with juice)
  • 2 cups Mini Marshmallows

  1. In a large mixing bowl, whisk together the instant pistachio pudding mix and the entire can of crushed pineapple (including juice). Stir until the mixture thickens and becomes creamy.
  2. Gently fold in the thawed Cool Whip until the salad is fully mixed and fluffy.
  3. Stir in the mini marshmallows and your choice of chopped pecans or walnuts.
  4. If using maraschino cherries, chop a few and gently mix them in, or reserve them whole for garnish.
  5. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour.
