  • 1 (8 oz / 226g) block cream cheese, softened
  • 1 cup (113g) shredded mozzarella cheese, low-moisture, part-skim
  • ½ cup (50g) freshly grated Parmesan cheese
  • ¼ cup (55g) mayonnaise, full-fat
  • 2 tablespoons chicken broth or milk
  • 1 clove garlic, minced or pressed
  • ¼ teaspoon freshly ground black pepper
  • 1 large baguette, sliced into ½-inch thick rounds
  • 3–4 tablespoons extra virgin olive oil
  • Fine sea salt, to taste
  • Black pepper, to taste
  • Optional: A sprinkle of garlic powder or dried Italian herbs
  • Optional: Fresh chives or parsley, chopped, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper. Slice baguette into ½-inch thick rounds. In a large bowl, toss baguette slices with 3-4 tablespoons olive oil, salt, pepper, and optional garlic powder or dried Italian herbs until lightly coated. Arrange in a single layer on baking sheets.
  2. Bake crostini for 8-10 minutes, flipping once halfway through, until golden and crisp. Remove from oven and cool completely on a wire rack. Crostini can be made ahead and stored in an airtight container.
  3. In a medium oven-safe skillet or Dutch oven, combine softened cream cheese, mayonnaise, and minced garlic over low heat. Stir continuously until smooth and fully melted. Do not rush this step to ensure a lump-free base.
  4. Crumble the Boursin cheese into the mixture. Continue stirring gently over low heat until the Boursin is fully incorporated and melted. Stir in the shredded mozzarella, grated Parmesan, and 2 tablespoons of chicken broth or milk. Season with ¼ teaspoon black pepper and salt to taste. Remove from heat.
  5. If not using an oven-safe skillet, transfer the dip to a small oven-safe baking dish. Bake in the preheated 375°F (190°C) oven for 15-20 minutes, or until the dip is hot, bubbly around the edges, and slightly golden on top.
  6. Carefully remove the dip from the oven and let it rest for 5-10 minutes before serving. Garnish with fresh chopped chives or parsley, if desired. Serve immediately with the crisp crostini arranged around it. This dip is best enjoyed warm.
  7. Store any leftover dip covered in the refrigerator for up to 3 days. To reheat, gently warm in a microwave-safe dish or in a 300°F (150°C) oven until bubbly, adding a splash of milk if needed to restore creamy consistency.
