  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, peeled, seeded, and finely grated
  • 2 cloves garlic, minced

  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Chicken:
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Salad:
  • 6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped (optional)
  • Pita bread or naan, for serving (optional)
  • Cucumber slices, for serving (optional)
  • Lemon wedges, for serving (optional)
  • Avocado slices, for serving (optional)

Instructions

  1. Prepare the Tzatziki Sauce: Grate cucumber and squeeze out excess liquid using a kitchen towel or cheesecloth.
  2. In a medium bowl, combine Greek yogurt, squeezed cucumber, minced garlic, lemon juice, and olive oil.
  3. Stir in fresh dill, salt, and pepper. Taste and adjust seasonings.
  4. Cover and refrigerate the tzatziki sauce for at least 30 minutes to allow flavors to meld.
  5. Prepare the Chicken: Pat chicken breasts dry. In a small bowl, combine olive oil, oregano, thyme, garlic powder, onion powder, salt, and pepper.
  6. Rub the spice mixture all over the chicken breasts.
  7. Heat a large skillet over medium-high heat. Sear chicken breasts for 5-7 minutes per side, until cooked through (internal temperature reaches 165°F/74°C).
  8. Remove chicken from skillet and let it rest for at least 5 minutes before slicing or shredding.
  9. Assemble the Tzatziki Chicken Salad: In a large bowl, combine mixed greens, cherry tomatoes, red onion, and Kalamata olives.
  10. Add the sliced or shredded chicken to the bowl.
  11. Spoon tzatziki sauce over the salad, starting with half and adding more as needed.
  12. Gently toss to combine and coat ingredients with the sauce.
  13. Sprinkle crumbled feta cheese over the top. Garnish with fresh parsley if desired.
  14. Serve immediately with optional pita bread, cucumber slices, lemon wedges, or avocado slices.
