The Best Turkey Gravy Recipe

- 1/4 cup turkey fat
- 1/4 cup all-purpose flour
- 2 cups turkey drippings
- 1 to 2 cups low-sodium turkey or chicken stock
- 1 teaspoon fresh thyme leaves (optional)
- 1/2 teaspoon finely chopped sage (optional)
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon heavy cream or a splash of white wine (optional)
Instructions
- After roasting the turkey, pour all drippings into a fat separator or large measuring cup and let the fat rise to the top. Skim off 1/4 cup of fat and reserve 2 cups of the liquid portion.
- In a medium saucepan over medium heat, add the turkey fat. Once hot, whisk in the flour to create a roux. Cook for 2–3 minutes until golden.
- Slowly whisk in the drippings, then add 1 cup of warm stock. Stir constantly to keep the texture smooth. Add more stock as needed to reach your desired consistency.
- Stir in fresh thyme and sage if using. Season with salt and black pepper to taste.
- Simmer on low for 5–10 minutes to deepen the flavor and thicken the gravy.
- Stir in cream or wine if desired for extra richness.
- For a refined texture, strain the gravy through a fine mesh sieve.
- Serve warm over turkey, potatoes, or stuffing. Keep warm until ready to serve.
