  • 1 teaspoon vanilla extract
  • 1/4 cup (60ml) heavy cream
  • 1 cup (150g) fresh strawberries, finely chopped
  • 1 1/2 cups (180g) graham cracker crumbs
  • 1/4 cup (50g) unsalted butter, melted
  • 1/4 cup (35g) chopped toasted pecans (optional)
  • Additional chopped strawberries for garnish (optional)

Instructions

  1. Prepare Crunch Topping: Combine graham cracker crumbs, melted unsalted butter, and chopped toasted pecans (if using). Mix until moistened. Spread the mixture evenly onto a parchment-lined baking sheet. Bake in a preheated oven at 300°F (150°C) for 8-10 minutes, or until lightly toasted and crisp. Let cool completely on the baking sheet to firm up. Break apart any large clumps.
  2. Prepare Cheesecake Filling: In a large bowl, beat softened cream cheese until completely smooth and fluffy (2-3 minutes). Reduce speed to low, gradually add granulated sugar and vanilla extract; beat until just combined. In a separate chilled bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until light and airy. Chill filling for at least 30 minutes to firm up.
  3. Form Cookie Taco Shells: Working in small batches (3-4 at a time), gently soften large, flat cookies (e.g., vanilla wafers or soft shortbread) in a microwave for 10-15 seconds or in a 200°F (95°C) oven for 3-5 minutes until pliable. Immediately drape each softened cookie over a dowel, rolling pin, or an inverted muffin tin ridge to form a taco shape. Allow to cool completely until firm and they retain their shape.
  4. Assemble the Tacos: Transfer the chilled cheesecake filling to a piping bag fitted with a large tip, or use a spoon. Gently fill each prepared cookie taco shell with a generous amount of cheesecake filling.
  5. Add Crunch and Garnish: Once filled, gently dip or generously sprinkle the exposed cheesecake filling of each taco with the prepared crunch topping. Place finely chopped fresh strawberries on top of the crunch for added flavor and visual appeal, and garnish with additional chopped strawberries if desired.
