Description

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 10 ounces fresh spinach, washed and roughly chopped
  • 4 ounces feta cheese, crumbled
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh dill (optional)
  • 8 large flour tortillas (10–12 inch)
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons unsalted butter

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook, stirring occasionally, until translucent and softened (5-7 minutes).
  2. Add minced garlic and cook for 1 minute, until fragrant.
  3. Add chopped spinach and cook, stirring frequently, until wilted (5-7 minutes).
  4. Remove from heat. Stir in crumbled feta cheese, oregano, salt, pepper, and dill (if using). Toss until feta is evenly distributed and slightly melted.
  5. Set aside to cool slightly.
  6. Lay out four tortillas on a flat surface.
  7. Spread 1/4 of the spinach and feta mixture evenly over one half of each tortilla, leaving a 1-inch border.
  8. Sprinkle 1/8 cup Monterey Jack cheese over the spinach mixture on each tortilla.
  9. Fold the other half of the tortilla over the filling, pressing edges to seal. Repeat with remaining tortillas.
  10. Melt butter in a large skillet over medium heat.
  11. Cook two quesadillas at a time for 3-4 minutes per side, or until golden brown and cheese is melted and bubbly. Press down gently with a spatula for even cooking.
  12. Remove quesadillas and place on a plate lined with paper towels. Repeat with remaining quesadillas.
  13. Let rest for 1-2 minutes before cutting into wedges.
