- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- 2 cups fresh spinach (lightly sautéed) or 1 cup frozen spinach (thawed and squeezed dry)
- 1/4 cup chopped green onions
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp ground black pepper
- 1/4 tsp salt
- cooking spray or butter for greasing the dish
Instructions
- Preheat oven to 375°F (190°C) and grease an 8×8 or 9×9-inch baking dish.
- If using fresh spinach, sauté until wilted and squeeze out excess moisture. If using frozen, thaw and squeeze dry.
- In a mixing bowl, whisk the eggs until frothy. Add milk, cottage cheese, garlic powder, onion powder, salt, and pepper. Mix well.
- Fold in spinach, cheddar cheese, Parmesan, and green onions until evenly combined.
- Pour the mixture into the greased baking dish and smooth out the top.
- Bake for 35–40 minutes, or until golden and the center is set.
- Let cool for 5–10 minutes before slicing and serving.
