- For the Dough:
- 1 cup All-Purpose Flour
- 2 tbsp Granulated Sugar
- 1/2 tsp Salt
- 1/2 cup Cold Butter
- 3–4 tbsp Ice Cold Water
- For the Filling:
- 3 cups Bosc Pears
- 1 tsp Ground Cinnamon
- 1/2 tsp Ground Ginger
- 1/4 tsp Ground Nutmeg
- 1/4 tsp Ground Cardamom
- 1 tbsp Lemon Juice
- For the Topping:
- 2 tbsp Turbinado Sugar
- 1 large Egg Yolk
- 1 tbsp Liquid Honey (Optional)
Instructions
- Make Dough: Whisk together the all-purpose flour, granulated sugar, and salt until combined. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice cold water, mixing until a dough forms. Chill in plastic wrap for at least 30 minutes.
- Prepare Filling: In a large bowl, toss the sliced Bosc pears with the ground cinnamon, ginger, nutmeg, cardamom, flour, salt, and lemon juice until evenly coated. Set aside to let the flavors meld together.
- Assemble: On a floured surface, roll out the chilled dough into a rough circle. Transfer to a baking sheet lined with parchment paper. Brush the center with melted butter, sprinkle with turbinado sugar and cinnamon, then arrange the spiced pear filling over the dough, leaving a little border. Fold the edges of the dough over the pears, creating a rustic border, and brush the edges with egg yolk.
- Chill: Place the assembled galette in the refrigerator for about 15 minutes while you preheat the oven to 375°F (190°C).
- Bake: Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the pear filling is bubbling.
- Cool: Once out of the oven, allow the galette to cool for about 10 minutes. For an extra touch, brush the baked pears with warm honey before slicing and serving warm.
