  • For the Crust:
  • 1 cup Graham Crackers, crushed
  • 1/2 cup Unsalted Butter, melted
  • 1/4 cup Granulated Sugar
  • For the Cookie Layer:
  • 1/2 cup Unsalted Butter, softened
  • 1/2 cup Granulated Sugar
  • 1/2 cup Light Brown Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • For the Mix-Ins:
  • 1 cup Mini Marshmallows
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 bar Hershey Bars, broken

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 13×9-inch baking pan with parchment paper for easy removal.
  3. In a bowl, combine crushed graham crackers, melted butter, and granulated sugar. Press this mixture firmly into the bottom of the prepared pan to form the crust.
  4. Bake the crust for 7 minutes, until lightly golden.
  5. In a separate bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar using a mixer until fluffy, about 2 minutes.
  6. Beat in the eggs and vanilla extract until the mixture is smooth and well combined.
  7. Gradually add the all-purpose flour, salt, and baking soda to the wet ingredients, mixing until just combined. Be careful not to overmix the cookie dough.
  8. Gently fold in the mini marshmallows and semi-sweet chocolate chips into the cookie dough.
  9. Spread the cookie dough mixture evenly over the pre-baked graham cracker crust.
  10. Bake for an additional 15 minutes.
  11. Remove the pan from the oven and immediately sprinkle the broken Hershey bars over the top of the cookie bars.
  12. Return the pan to the oven and bake for another 20-25 minutes, or until the bars are set and golden brown.
  13. Allow the S’mores Cookie Bars to cool completely in the pan before cutting them into squares.
