Description
Slow Cooker Beef Manhattan is a comforting, easy-to-prepare meal, featuring fork-tender beef braised in a rich, savory gravy. This traditional dish is adapted for modern convenience, delivering gourmet-level comfort with minimal effort.
Ingredients
- 3–4 pounds beef chuck roast
- 2 tablespoons olive oil
- 2 large yellow onions, peeled and roughly chopped
- 4–6 cloves garlic, minced
- 4 cups (32 ounces) low-sodium beef broth
- 1 (10.5 ounce) can condensed cream of mushroom soup
- 1 (1 ounce) packet dry onion soup mix
- 2 tablespoons Worcestershire sauce
- ¼ cup apple cider vinegar
- 1 teaspoon dried thyme
- 2 whole bay leaves
- Salt and freshly ground black pepper, to taste
- 3 pounds (about 6-8 medium) Russet or Yukon Gold potatoes, peeled and quartered (for mashed potatoes)
- ½ cup whole milk or half-and-half, warmed (for mashed potatoes)
- ¼ cup (½ stick) unsalted butter, softened (for mashed potatoes)
- Salt and white pepper, to taste (for mashed potatoes)
- 1 loaf sturdy sandwich bread (such as Texas toast, thick-sliced white bread, or brioche), about 2 slices per person
- ¼ cup fresh parsley, finely chopped (optional, for garnish)
Instructions
- Pat beef chuck roast dry, trim excess fat, and season generously with salt and pepper. Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat until shimmering. Sear beef for 3-5 minutes per side until a deep, golden-brown crust forms on all surfaces. Remove beef and set aside.
- Reduce heat to medium. Add chopped yellow onions to the same pot and sauté for 5-7 minutes until soft. Add minced garlic and cook for 1 minute until fragrant. If using a separate slow cooker, deglaze the pot with ½ cup beef broth, scraping up browned bits, then transfer the onion-garlic mixture and liquid to your slow cooker.
- In the slow cooker, add remaining 3½ cups beef broth, cream of mushroom soup, dry onion soup mix, Worcestershire sauce, apple cider vinegar, dried thyme, and bay leaves. Whisk well to combine. Carefully place seared beef into the liquid, ensuring it’s mostly submerged.
- Secure the lid and cook on LOW for 7-9 hours, or HIGH for 4-5 hours, until the beef is incredibly fork-tender and easily shreds. Avoid lifting the lid during cooking.
- Carefully remove beef from the slow cooker and shred it into bite-sized pieces, discarding bay leaves and any large fat pieces. If desired, thicken the gravy by whisking in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and cooking on high for 15-20 minutes. Return shredded beef to the slow cooker and toss to coat in the luscious gravy. Keep warm.
- For mashed potatoes: Place peeled and quartered potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then simmer for 15-20 minutes until fork-tender. Drain potatoes thoroughly. Return to the pot and add warmed milk and softened butter. Mash until smooth and creamy. Season with salt and white pepper. Keep warm.
- Prepare your chosen sturdy sandwich bread (e.g., toast Texas toast lightly, or serve thick-sliced white bread untoasted/lightly toasted).
- On each plate, lay 2 slices of sturdy bread. Generously spoon warm mashed potatoes on top, then pile high with the tender, gravy-coated shredded beef. Ladle extra gravy over the entire dish. Garnish with fresh parsley, if desired, and serve immediately while piping hot. Enjoy your Slow Cooker Beef Manhattan!
Notes
- Patting the beef dry before searing is crucial for a good crust and flavor.
- Do not rush the searing process; the golden-brown crust adds significant flavor.
- Avoid lifting the slow cooker lid during cooking to maintain heat and ensure proper cooking time.
- If you prefer a thinner gravy, you can skip the cornstarch slurry.
- Adjust salt and pepper to taste throughout the cooking process.
- This Slow Cooker Beef Manhattan is even better the next day as leftovers.
