Description

Enjoy vibrant and flavorful Shrimp Avocado Mango Bowls, a healthy and easy meal perfect for lunch or dinner. This recipe features perfectly seasoned shrimp, creamy avocado, sweet mango, and a zesty lime dressing.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 2 ripe mangoes, diced
  • 1/4 red onion, finely diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 2–3 limes
  • 1/2 to 1 jalapeño, seeded and minced (optional)
  • 2–3 cups cooked rice or quinoa
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • For the Dressing: 2 tablespoons olive oil, 1 tablespoon lime juice, 1/2 teaspoon honey or maple syrup (optional), salt and pepper to taste
  • Optional Toppings: sesame seeds, red pepper flakes, chopped green onions, tortilla strips

Instructions

  1. Prepare the Mango Salsa: Dice mango, red onion, and jalapeño (if using). Chop cilantro. Combine in a bowl, add lime juice, salt, and pepper. Let rest.
  2. Marinate and Cook Shrimp: Combine olive oil, chili powder, cumin, garlic powder, salt, and pepper in a bowl. Add shrimp and marinate for 10-15 minutes. Cook shrimp in a skillet over medium-high heat for 2-3 minutes per side until pink and opaque. Set aside.
  3. Prepare Avocado and Rice/Quinoa: Dice avocados and toss with lime juice to prevent browning. Prepare or warm cooked rice or quinoa.
  4. Make Optional Lime Dressing: Whisk together olive oil, lime juice, honey or maple syrup (if using), salt, and pepper.
  5. Assemble Bowls: Layer rice or quinoa in bowls. Top with diced avocado, mango salsa, and cooked shrimp. Drizzle with dressing and add optional toppings.

Notes

  • For less heat in the salsa, remove the seeds and membranes from the jalapeño.
  • Do not overcook the shrimp, as they can become rubbery.
  • Tossing diced avocado with lime juice helps prevent browning.
  • Adjust dressing ingredients to your taste preference.
