- 1 lb Large Sea Scallops
- 1 tbsp Olive Oil
- 1 tbsp Butter
- 2 cloves Garlic, minced
- 1–2 tsp Cajun Seasoning, divided
- 1/2 cup Heavy Cream
- 1 tsp Lemon Juice
- 1 tbsp Fresh Parsley, chopped
- Salt and Pepper to taste
Instructions
- Pat scallops completely dry with paper towels.
- Season scallops with salt, pepper, and a pinch of Cajun seasoning.
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Add scallops to the hot skillet, ensuring not to overcrowd the pan.
- Sear scallops for about 2 minutes per side until golden brown. Remove scallops from the skillet and set aside.
- Reduce heat to medium. Add butter to the same skillet and let it melt.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in Cajun seasoning and then pour in the heavy cream.
- Simmer the sauce for 2-3 minutes until it thickens slightly.
- Return the seared scallops to the skillet. Spoon the sauce over them to coat.
- Finish with a squeeze of lemon juice and a sprinkle of fresh parsley.
Notes
- Use dry sea scallops for the best sear and flavor.
- Do not overcrowd the pan when searing scallops. Cook in batches if necessary.
- Adjust the amount of Cajun seasoning to your spice preference.
