Ingredients

Scale
  • 2 cups (240g) All-Purpose Flour
  • 2 tablespoons Granulated Sugar
  • 1 tablespoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Nutmeg
  • ¼ teaspoon Ground Ginger
  • ⅛ teaspoon Ground Cloves (optional)
  • ½ teaspoon Salt
  • 1 ½ cups (360ml) Whole Milk
  • 1 cup (240g) Pumpkin Puree (100% pure)
  • 2 Large Eggs
  • ¼ cup (60g) Unsalted Butter, melted and slightly cooled
  • 1 teaspoon Vanilla Extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, ginger, optional cloves, and salt.
  2. In a separate large bowl, whisk together the milk, pumpkin puree, eggs, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix with a spatula just until combined. A few lumps are okay; do not overmix.
  4. Let the batter rest for 10-15 minutes for fluffier waffles.
  5. Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease if needed.
  6. Pour about ½ to ¾ cup of batter onto the hot waffle iron.
  7. Cook for 3-6 minutes, or until golden brown and crisp.
  8. Remove the waffle and serve immediately with your favorite toppings.

Notes

  • Use 100% pure pumpkin puree, not pumpkin pie filling.
  • Do not overmix the batter to ensure fluffy waffles.
  • For best results, let the batter rest before cooking.
  • Keep cooked waffles warm on a wire rack in a low oven.
