Description
Pumpkin protein muffins are a healthier twist on a pumpkin muffin with protein powder and greek yogurt added. They’re soft, tender, and full of fall spiced flavor.

- 3 tablespoon oil (melted coconut oil)
- ¼ cup (55 g) brown sugar
- ¼ cup (56 g) maple syrup
- ¼ cup (61 g) apple sauce
- ¼ cup (50 g) greek yogurt (room temp)
- 8 ounces (226.8 g) pumpkin puree
- 2 large eggs (room temp)
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 tablespoon pumpkin spice
- ½ cup (60 g) vanilla protein powder
- 1¼ cups (175 g) flour (all-purpose or gluten free)
Instructions
- Preheat oven to 350 F. Line muffin tin with liners and spray liners with cooking spray.
- In a large bowl whisk together oil, brown sugar, maple syrup, apple sauce, greek yogurt, pumpkin, eggs and vanilla.
- Add baking powder, salt, pumpkin spice, protein powder and flour. Mix until combined.
- Using a ¼ cup cookie scoop, scoop batter into prepared muffin cups.
- Bake for 20-23 minutes, or until a toothpick inserted in the middle comes out clean.
- Allow to cool for about 10 minutes before removing from pan.
Notes
- These would be very good with chocolate chips added.
- These muffins will have best results if using room temperature ingredients.
- Grams will be more precise, especially when measuring flour. If you don’t have a kitchen scale, lightly spoon flour into your measuring cup to insure it’s not packed in there. Light and fluffy is the key.
