Description

  • 2 tablespoons Olive Oil

  • 1 teaspoon Freshly Ground Black Pepper

  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Fresh Thyme or Dried Thyme
  • 1 medium Shallot, finely chopped
  • 3 cloves Garlic, minced
  • 1/2 cup Dry White Wine or Chicken Broth
  • 1 cup Heavy Cream
  • 2 tablespoons Dijon Mustard
  • 1 tablespoon Fresh Lemon Juice
  • 1/4 cup Fresh Parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat the pork tenderloin dry and coat with olive oil.
  3. Season generously with salt, pepper, garlic powder, onion powder, smoked paprika, and thyme.
  4. Sear the pork in an oven-safe skillet over medium-high heat for 3-4 minutes per side until golden brown.
  5. Transfer the skillet to the oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Let the pork rest for 5-10 minutes before slicing.
  7. While the pork rests, sauté the chopped shallots and minced garlic in the same skillet until softened, about 2-3 minutes.
  8. Deglaze the skillet with white wine or chicken broth, scraping up any browned bits.
  9. Stir in the heavy cream, Dijon mustard, and lemon juice.
  10. Simmer the sauce for 5-7 minutes until thickened, stirring occasionally.
  11. Slice the pork tenderloin, drizzle with the Dijon cream sauce, and garnish with fresh parsley. Serve hot.
