- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup raspberry or strawberry jam
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Add in the egg and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until a dough forms.
- Scoop tablespoon-sized balls of dough and roll them in your hands. Place them on the prepared baking sheet about 2 inches apart.
- Using your thumb or the back of a spoon, make a small indent in the center of each cookie.
- Fill each indent with about 1/2 teaspoon of jam.
- Bake for 10–12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Use room temperature ingredients for best results.
- Do not overbake; cookies should be slightly soft when removed from the oven.
- Experiment with different jam flavors for variety.
- For thicker cookies, chill the dough for 20-30 minutes before baking.
- Optional: Drizzle with melted chocolate or roll in crushed peanuts before baking.
