- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 cup creamy peanut butter
- 1/4 cup powdered sugar
- 1 tablespoon milk
- 1/3 cup chocolate chips (plus more for topping)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners or grease lightly.
- Melt the butter in a microwave-safe bowl. Stir in granulated and brown sugar until combined.
- Whisk in eggs and vanilla extract.
- In a separate bowl, mix flour, cocoa powder, and salt.
- Add dry ingredients to wet ingredients and stir until just combined.
- Spoon the batter evenly into muffin tins, about 3/4 full.
- Bake for 15–18 minutes until the tops are set. Let cool in the pan for 10 minutes.
- In a bowl, combine peanut butter, powdered sugar, and milk until smooth and spreadable.
- Once brownie cups are mostly cooled, spread peanut butter mixture on top of each.
- Press additional chocolate chips into the top while still soft.
- Let set at room temperature or chill briefly.
- Serve warm, room temp, or chilled.
