Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons neutral oil (canola, avocado, or vegetable oil)
  • 1 tablespoon coarse kosher salt
  • to taste freshly ground black pepper
  • toppings unsalted butter
  • toppings sour cream
  • toppings shredded cheddar cheese
  • toppings cooked bacon bits
  • toppings chopped chives or green onions
  • toppings steamed broccoli
  • toppings chili or pulled pork for loaded versions

Instructions

  1. Preheat your oven to 425°F (218°C) and ensure it’s fully heated before baking.
  2. Scrub the potatoes clean with a brush under running water and dry them completely.
  3. Poke each potato 6–8 times with a fork to create steam vents.
  4. Rub each potato with oil and sprinkle with kosher salt.
  5. Place them directly on the oven rack or on a wire rack over a baking sheet.
  6. Bake for 45–60 minutes, until a fork slides in easily and the skin feels crisp.
  7. Let them rest for 5 minutes, then slice open and gently fluff the inside.
  8. Add your favorite toppings and serve immediately.
