Instructions

  1. Season the chicken and sausage with Cajun seasoning, then sear them in hot oil until golden brown, about 10 minutes. Remove the proteins and set them aside.
  2. In the same pot, combine vegetable oil and flour. Stir continuously for about 45 minutes until the mixture reaches a deep brown color, ensuring it doesn’t burn.
