- Few drops green food coloring (optional)
- Extra powdered sugar for rolling
Instructions
- Cream together softened butter and powdered sugar until light and fluffy.
- Add vanilla extract, peppermint extract, and green food coloring (if using); mix until combined.
- In a separate bowl, whisk together flour and salt.
- Gradually add dry mixture to butter mixture, mixing on low speed until a soft dough forms.
- Fold in mini chocolate chips evenly.
- Chill dough for 30 minutes if too soft to handle.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll tablespoon-sized portions of dough into balls and place on the baking sheet.
- Bake for 10–12 minutes until bottoms are lightly golden (tops should stay pale).
- Let cookies cool for 5 minutes, then roll them in powdered sugar while still warm.
- Transfer to wire rack to cool completely.
- Once cooled, roll again in powdered sugar for a snowy finish.
