- 1 head Cauliflower
- 2 tablespoons Mild Tasting Oil (e.g., avocado or sunflower oil)
- 1/2 cup Mayonnaise (homemade or storebought)
- 1 teaspoon Chili Powder (adjust to taste)
- 1/4 cup Cotija Cheese (may substitute with feta or ricotta salata)
- 1/4 cup Fresh Cilantro (or parsley)
- 2 pieces Lime Wedges (for serving)
Instructions
- Preheat the grill to medium heat, about 10 minutes.
- Prepare the cauliflower by removing leaves and cutting into four thick steaks, about one inch thick.
- Brush oil on both sides of cauliflower steaks to prevent sticking.
- Grill the steaks over medium heat for 5-6 minutes, then flip and grill for another 5-6 minutes.
- For a softer texture, move steaks to indirect heat and grill covered for about 10 more minutes.
- Remove steaks and brush generously with mayonnaise.
- Top with chili powder, crumbled cotija cheese, and cilantro.
- Squeeze lime wedges over steaks and serve immediately.
