Delicious Loaded Breakfast Hash
Ingredients

- 3 cups diced Yukon Gold or red potatoes
- 1/2 pound breakfast sausage
- 1 red bell pepper, diced
- 1 small yellow onion, diced
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 4–6 eggs
- 2 tablespoons olive oil or butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Prep all the ingredients: dice potatoes, chop vegetables, and slice mushrooms. Crack the eggs into a bowl.
- Heat olive oil in a large skillet over medium heat. Add diced potatoes, season with salt and pepper, and cook undisturbed for 5-7 minutes until golden. Flip and cook another 8-10 minutes until tender and crispy. Remove from pan.
- In the same skillet, cook sausage until browned and cooked through, about 5-7 minutes. Remove and set aside.
- Add diced onion, bell pepper, and mushrooms to the pan. Sauté for 5-6 minutes until soft and lightly caramelized. Add garlic and cook for 1 minute more.
- Return the potatoes and sausage to the pan. Toss everything together and cook for 2-3 minutes to combine flavors.
- Make 4-6 small wells in the hash and crack an egg into each. Cover the skillet and cook over low heat for 4-6 minutes until egg whites are set but yolks are still runny.
- Garnish with parsley, adjust seasoning, and serve immediately.
