- 3 large Eggs
- 1.33 cups Whole Milk
- 2 tablespoons Fresh Lime Zest
- 2 tablespoons Fresh Lime Juice
- 2 cups Granulated Sugar

- 1 teaspoon Baking Powder
- 0.5 teaspoon Baking Soda
- 1 teaspoon Salt
- 0.5 cup Softened Butter
- 8 oz Cream Cheese
- 4 cups Powdered Sugar
Instructions
- Preheat your oven to 325°F (165°C) and grease and flour two 9-inch cake pans.
- In a large mixing bowl, combine the oil, eggs, milk, lime zest, and lime juice. Beat for about 2 minutes until pale and frothy.
- Gradually add sugar, flour, baking powder, baking soda, and salt. Stir gently until just combined.
- Evenly divide the batter between prepared cake pans and smooth the tops.
- Bake for 30-36 minutes until a toothpick inserted in the center comes out clean.
- Allow cakes to cool completely on a wire rack.
- In a mixing bowl, cream together softened butter and cream cheese until light and fluffy.
- Gradually mix in powdered sugar, lime juice, and zest until smooth.
- Frost the top of one cake layer, add the second layer on top, and frost the top and sides.
Notes
- Feel free to swap canola oil with any neutral oil.
- Using buttermilk gives extra tanginess.
- For gluten-free, use special flour blends.
- Adjust powdered sugar for desired frosting consistency.
