Description

Lemon Meringue Island Delight Pie is a delightful dessert featuring a crunchy graham cracker crust, a luscious lemon filling, and a fluffy meringue topping for a burst of citrus flavor.

  • 2 tbsp sugar (for crust)
  • ¼ tsp salt (for crust)
  • 5 tbsp unsalted butter, melted
  • 1 ¼ cups sugar (for lemon filling)
  • ½ cup cornstarch
  • ¼ tsp salt (for filling)
  • 1 ½ cups water
  • 4 large egg yolks
  • ½ cup freshly squeezed lemon juice
  • 2 tbsp lemon zest
  • 2 tbsp unsalted butter (for filling)
  • 4 large egg whites (for meringue)
  • ½ cup sugar (for meringue)
  • ¼ tsp cream of tartar
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, salt, and melted butter until it resembles wet sand. Press firmly into a pie dish to form the crust. Bake for 8 minutes and let it cool completely.
  2. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add water, stirring constantly until the mixture thickens and bubbles (about 5-7 minutes).
  3. In a separate bowl, beat the egg yolks until pale. Stir in a few tablespoons of the hot mixture to temper the yolks. Pour tempered yolks back into the saucepan. Cook for another 2 minutes, then remove from heat.
  4. Stir in freshly squeezed lemon juice, zest, and butter until smooth. Pour the lemon filling into the cooled pie crust.
  5. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add sugar, a tablespoon at a time, while continuing to beat until stiff glossy peaks form.
  6. Spoon the meringue over the lemon filling, spreading it to seal the edges.
  7. Bake at 350°F (175°C) for 10–12 minutes, or until the meringue turns golden brown.
  8. Let the pie cool at room temperature, then chill in the refrigerator for 4 hours to set.
