  • ¾ cup granulated sugar (divided use)
  • 1 tablespoon fresh lemon zest (for flavor)
  • 1 tablespoon lemon juice (freshly squeezed)
  • ¾ cup cake flour (sifted)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 1 ½ cups powdered sugar
  • 1 tablespoon heavy cream (for consistency)
  • ¼ cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 10×15 inch jelly roll pan with parchment paper.
  2. In a large mixing bowl, beat the eggs on high speed for about 5 minutes until pale and thick. Gradually add half of the granulated sugar.
  3. Gently fold in the fresh lemon juice and zest into the egg mixture.
  4. Sift the cake flour, baking powder, and salt over the egg mixture, then fold until no dry flour streaks remain.
  5. Spread the batter evenly in the lined pan and bake for 10-12 minutes or until the top springs back when lightly touched.
  6. Immediately invert the hot cake onto a kitchen towel sprinkled with powdered sugar. Roll the cake tightly with the towel and let it cool.
  7. In a separate bowl, beat the softened cream cheese, unsalted butter, and powdered sugar until smooth and creamy.
  8. Unroll the cooled cake, spread the cream filling evenly, and reroll the cake without the towel.
  9. Chill the rolled cake seam-side down in the refrigerator for at least 1 hour before slicing.
  10. Optional: Dust the finished roll with powdered sugar before serving.
