  • 1 package (9 oz) cheese tortellini
  • 1 cup mozzarella balls (ciliegine or bocconcini)
  • 12 slices salami, halved
  • 1 cup cherry tomatoes
  • ½ cup green olives
  • ½ cup kalamata olives
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the tortellini according to package instructions until al dente, then drain and rinse under cold water. Let cool.
  2. In a large bowl, whisk together olive oil, balsamic vinegar, garlic, and Italian herbs.
  3. Add the cooked tortellini and mozzarella balls to the marinade. Toss gently to coat. Cover and refrigerate for at least 30 minutes.
  4. While marinating, prepare the other ingredients: slice salami, rinse tomatoes, and gather olives.
  5. Assemble the Italian antipasto skewers by alternating marinated tortellini, mozzarella, salami, olives, and cherry tomatoes. Repeat the pattern as needed.
  6. Arrange on a platter and drizzle with extra marinade or olive oil before serving. Garnish with fresh basil if desired.
  7. Serve chilled or at room temperature.
