  • 2 lbs small red potatoes, scrubbed and halved or quartered if large
  • 1 lb Italian sausage (sweet or hot, your preference), casings removed
  • 1/2 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley, for garnish (optional)
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and scrub them clean. Cut them into halves or quarters, aiming for roughly uniform pieces.
  3. In a large bowl, toss the potatoes with 1 tablespoon of olive oil, salt, dried rosemary, and dried thyme. Ensure all potatoes are evenly coated.
  4. Spread the seasoned potatoes in a single layer on a large baking sheet. Avoid overcrowding the pan.
  5. While the potatoes are roasting, crumble the Italian sausage into a large skillet over medium heat. Cook, breaking it up with a spoon, until it’s browned and cooked through (about 8-10 minutes).
  6. Remove the cooked sausage from the skillet and set it aside. Leave any rendered fat in the pan.
  7. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant, being careful not to burn it.
  8. Pour in the honey, soy sauce, and apple cider vinegar. Stir to combine.
  9. Bring the mixture to a simmer over medium-low heat. Stir in the Dijon mustard.
  10. Continue to simmer for 2-3 minutes, or until the sauce slightly thickens. Taste and adjust seasoning as needed.
  11. After 20-25 minutes of roasting, check the potatoes. They should be tender inside and starting to crisp outside. Continue roasting for another 5-10 minutes if needed.
  12. Add the cooked sausage to the baking sheet with the potatoes. Toss gently to combine.
  13. Pour the honey garlic sauce over the potatoes and sausage. Toss again gently to ensure everything is well coated.
  14. Roast for another 5-7 minutes, or until the sauce is bubbly and slightly caramelized.
  15. Remove the baking sheet from the oven and let it cool slightly before serving.
  16. Garnish with fresh parsley, if desired.
