- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (28-ounce) can diced tomatoes, with juice
- 1 cup low-sodium chicken broth
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for 1 minute.
- Add ground turkey. Break it apart and cook until fully browned, about 6–8 minutes. Season with salt and pepper.
- Stir in diced bell peppers and cook for 4–5 minutes until just softened.
- Add tomato paste, chili powder, cumin, paprika, and more salt and pepper. Cook for 2–3 minutes while stirring to combine flavors.
- Add black beans, kidney beans, diced tomatoes (with juice), and chicken broth. Mix everything well.
- Bring to a boil, then reduce heat to low. Cover partially and simmer for at least 30 minutes, stirring occasionally.
- Taste and adjust seasoning. Add more chili powder for heat or a squeeze of lime for brightness. Serve warm.
