- 2 medium zucchini
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/3 cup grated Parmesan cheese
- 1/4 cup chopped green onions or chives
- 1–2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- Grate the zucchini using a box grater and place in a colander. Sprinkle with salt and let sit for 10–15 minutes.
- Use a clean kitchen towel or cheesecloth to squeeze out as much moisture as possible from the zucchini.
- In a large bowl, combine the zucchini with eggs, flour, Parmesan, green onions, garlic, salt, and pepper. Mix well.
- Heat a skillet over medium heat and add a little olive oil.
- Scoop 2 tablespoons of batter, shape into patties, and place in the pan. Cook for 3–4 minutes on each side until golden brown.
- Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
- Serve hot with Greek yogurt, sour cream, or your favorite dip.
