Description

Gumbo Fried Rice is a delightful dish filled with bold flavors, smoky sausage, and shrimp, perfect for an extraordinary weeknight meal.


Ingredients

  • 1 tablespoon extra virgin olive oil (for sautéing)
  • 8 ounces kielbasa or andouille sausage
  • 1 pound shrimp (fresh or frozen)
  • 2 tablespoons Creole seasoning (adjust to taste)
  • 1 medium onion (finely chopped)
  • 1 medium green bell pepper (or substitute with red/yellow)
  • 2 stalks celery
  • 4 stalks green onions (white parts for cooking, green tops for garnish)
  • 1 cup chicken broth (optional, for added flavor)
  • 3 cups long grain white rice (cooked)
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • to taste salt and pepper

Instructions

  1. Heat 1 tablespoon of olive oil in a saucepan over medium heat. Add minced onion, turmeric, garlic powder, salt, and pepper; sauté until onions are tender, about 2-3 minutes.
  2. Stir in the rice to coat it with the oil and spices. Pour in the chicken broth then bring to a boil by turning the heat up.
  3. Cover the saucepan with a lid, lower the heat to medium-low, and let it simmer for 15 minutes. Remove from heat and keep covered for an additional 10 minutes.
  4. While the rice sits, whisk eggs in a small dish with salt and pepper, set aside for later.
  5. In a large wok or skillet, heat 1 tablespoon of olive oil over medium-high heat. Add sausage and sauté until browned, about 2-3 minutes. Remove to a plate and set aside.
  6. In the same wok, heat another tablespoon of olive oil. Add shrimp, season with Creole seasoning, and sauté until pink and cooked through, about 1-2 minutes. Move to the plate with sausage.
  7. Add remaining olive oil to the wok, then toss in bell pepper, celery, onion, and the white parts of green onions. Sauté until vegetables are tender, around 7-9 minutes.
  8. Push the vegetables to one side of the wok and pour the seasoned eggs into the center. Scramble until cooked through.
  9. Add the sausage, shrimp, and the cooked rice to the wok. Toss everything together with Creole seasoning to taste. If the rice is dry, splash in optional chicken broth to moisten it.
  10. Dish out the Gumbo Fried Rice and garnish with the green parts of green onions and a drizzle of hot sauce for extra kick!
