  • Yield: 4 servings 1x
  • Diet: Gluten Free

Description

This Ground Beef Sweet Potato Power Bowl combines seasoned ground beef, roasted sweet potatoes, and sautéed green bell peppers for a nutritious and flavorful meal. It’s topped with creamy Greek yogurt and fresh cilantro, making it perfect for weeknights or meal prep.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 large sweet potato, peeled and diced
  • 1 tbsp olive oil
  • 1 green bell pepper, chopped
  • 1 tbsp soy sauce or tamari
  • 1 tsp cornstarch
  • 2 tbsp water
  • For serving: Greek yogurt, fresh cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potato with olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  3. While the sweet potatoes are roasting, season the ground beef with smoked paprika, cumin, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.
  4. Heat a large skillet over medium-high heat. Add the seasoned ground beef and cook, breaking it apart with a spatula, until browned and cooked through. Drain off any excess grease.
  5. Add the chopped green bell pepper to the skillet with the ground beef and cook for 3-5 minutes, until slightly softened.
  6. In a small bowl, whisk together soy sauce (or tamari), cornstarch, and water to create a sauce. Pour this sauce over the ground beef and pepper mixture in the skillet.
  7. Stir well and cook for another 1-2 minutes, until the sauce has thickened and coats the beef and peppers.
  8. To assemble the bowls, divide the roasted sweet potatoes and the ground beef mixture among serving bowls.
  9. Top with a dollop of Greek yogurt and a sprinkle of fresh cilantro.

Notes

  • For meal prep, divide the components into airtight containers and refrigerate for up to 4 days. Reheat gently before serving.
  • Feel free to add other vegetables like onions or spinach to the skillet with the bell peppers.
  • Adjust the spices to your preference. A pinch of chili powder can add extra heat.
  • Ensure sweet potatoes are diced uniformly for even roasting.
  • Do not overcrowd the skillet when cooking the ground beef to achieve a good sear.
  • Serve this ground beef sweet potato recipe warm.
