- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup vegetable broth (or chicken broth)
- 5 ounces fresh spinach, roughly chopped
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and freshly ground black pepper to taste
- Fresh basil leaves, for garnish (optional)
Instructions
- Prepare the Tomato Sauce: Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Pour in the crushed tomatoes and tomato sauce. Stir to combine. Add oregano, basil, and red pepper flakes (if using). Season with salt and pepper. Pour in the vegetable broth.
- Bring the sauce to a simmer, reduce heat to low, cover, and simmer for at least 15 minutes, or up to 30 minutes, stirring occasionally.
- Cook the Gnocchi: While the sauce simmers, prepare gnocchi according to package directions. If boiling, cook in salted water until they float, plus an additional minute. Drain well.
- Combine and Finish: Add cooked gnocchi to the simmering tomato sauce. Stir gently to coat.
- Add chopped spinach to the skillet. Stir until wilted, about 2-3 minutes.
- Stir in grated Parmesan cheese.
- Taste and adjust seasoning as needed.
- Simmer for another 5 minutes to allow flavors to meld and sauce to thicken.
- Serve immediately, garnished with fresh basil and extra Parmesan cheese.
