Description

Gingerbread Truffles are a delightful treat that combines the spicy flavor of gingersnap cookies with creamy cream cheese, coated in white almond bark and decorated with festive sprinkles.


Ingredients

  • 12 ounces gingersnap cookies (340-gram package)
  • 8 ounces cream cheese, room temperature (226-gram package)
  • ½ teaspoon pure vanilla extract
  • 12 ounces white almond bark (340 grams)
  • Holiday sprinkles, optional garnish

Instructions

  1. Crush the gingersnap cookies into crumbs using a food processor or a ziplock bag and a rolling pin.
  2. Add cream cheese and vanilla to a mixing bowl. Beat until smooth.
  3. Mix in gingersnap crumbs and chill in the refrigerator for 30 minutes.
  4. Line a baking sheet with parchment paper and lightly spray it with nonstick cooking spray.
  5. Scoop out the mixture and roll into balls, placing them on the parchment paper.
  6. Melt the almond bark in a microwave-safe bowl, stirring until smooth.
  7. Roll the truffles in the melted almond bark and sprinkle with holiday sprinkles.
  8. Return the truffles to the refrigerator to set the coating.
