Melt-in-Your-Mouth Gingerbread Cookies with Royal Icing


Ingredients

  • 3/4 cup Unsalted Butter (Or margarine for dairy-free)
  • 1 cup Granulated Sugar (Coconut sugar for lower glycemic option)
  • 1/2 cup Light Brown Sugar (All granulated sugar works in a pinch)
  • 1 large Egg (Use a flax egg for vegan)
  • 3/4 cup Dark Molasses (Light molasses or honey can be used)
  • 4 cups All-Purpose Flour (Substitute with gluten-free flour if needed)
  • 1 tbsp Ground Ginger
  • 1 tbsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 1/4 tsp Ground Cloves
  • 1 tsp Baking Soda
  • 1/2 tsp Fine Salt
  • 4 cups Powdered Sugar
  • 3 tbsp Meringue Powder (Egg white powder can replace it)
  • 5 tbsp Water (Adjust for desired consistency)
  • 1 tsp Vanilla or Almond Extract (Adds flavor to icing)
  • Gel Food Coloring (For vibrant decorating)
  • White Sanding Sugar (Optional for decoration)

Instructions

  1. Cream the unsalted butter with granulated and brown sugars until light and fluffy. Mix in the egg and dark molasses.
  2. In a separate bowl, whisk together the flour, ground ginger, cinnamon, nutmeg, cloves, baking soda, and salt. Combine with the wet mix until a thick dough forms.
  3. Divide the dough into two portions and wrap each in plastic wrap. Chill in the refrigerator for about 1 hour.
  4. Preheat your oven to 350°F (175°C). Roll the chilled dough to about 1/4 inch thick and use cookie cutters to cut out shapes.
  5. Place cutouts back in the refrigerator for 15 minutes. Bake on lined sheets for 10-11 minutes.
  6. Let cookies cool on pans for 15 minutes before transferring to wire racks.
  7. In a bowl, mix powdered sugar with meringue powder. Gradually add water and extract, beating until stiff peaks form.
  8. Divide and color the icing with gel food coloring for decorating.
  9. Use piping bags to decorate cooled cookies and allow drying completely.

Notes

  • Cookies can be stored in an airtight container for up to one week.
  • Royal icing can be made ahead and stored in the refrigerator.
