Crispy, golden, and deeply spiced, this Flavorful Indian-Style Okra is a quick weeknight side dish.

- 2 cups fresh okra, chopped
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon amchur powder (or lemon juice)
- Salt to taste
Instructions
- Wash the okra thoroughly and dry it completely using a kitchen towel or paper towels.
- Trim both ends and cut into 1/2-inch thick pieces.
- Heat oil in a wide nonstick pan over medium flame.
- Add cumin seeds and let them sizzle for a few seconds.
- Add chopped okra and spread it out in the pan. Stir gently to coat.
- Cook uncovered for 10–12 minutes, stirring occasionally until lightly crisped.
- Add turmeric, red chili powder, coriander powder, and salt. Mix to coat evenly.
- Add amchur powder and cook for 2–3 more minutes.
- Serve hot with rice or roti.
