Fiesta Chicken is a vibrant and flavorful dish inspired by Tex-Mex cuisine. It features tender chicken breasts with zesty Southwest flavors, making it a perfect weeknight meal. This one-pan dish is easy to make, versatile, and packed with a punch.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 medium yellow onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 (15 ounce) can tomato sauce
- 1 packet (1 ounce) taco seasoning
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream, for topping (optional)
- 1/4 cup chopped cilantro, for topping (optional)
- Tortilla chips, for serving (optional)
Instructions
- Cut chicken breasts into 1-inch cubes.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add chicken and cook until no longer pink and lightly browned. Remove chicken and set aside.
- Add chopped onion, red bell pepper, and green bell pepper to the skillet. Cook until softened and slightly caramelized, about 5-7 minutes.
- Return cooked chicken to the skillet.
- Add black beans, corn, diced tomatoes and green chilies, tomato sauce, taco seasoning, and chicken broth.
- Stir everything together well.
- Bring the mixture to a simmer over medium heat.
- Reduce heat to low, cover, and simmer for at least 15-20 minutes, stirring occasionally.
- Taste and adjust seasoning as needed.
- Serve over tortilla chips, rice, quinoa, in tacos or burritos, or as a salad.
- Top with shredded cheddar cheese, sour cream, and cilantro if desired.

- For extra heat, add cayenne pepper or hot sauce.
- Add other vegetables like zucchini, squash, or mushrooms.
- Substitute pinto or kidney beans for black beans.
- Make it vegetarian by omitting chicken and adding more beans or tofu.
