Ingredients

- 250 grams Enoki Mushrooms (Fresh, firm, and white)
- 2 tablespoons Vegetable or olive oil
- 2 cloves Garlic (Fresh, minced)
- 3 tablespoons Light Soy Sauce (Tamari for gluten-free)
- 1 teaspoon Sugar
- 2 units Scallion (Chopped)
Instructions
- Trim the enoki mushrooms by gently cutting about 1-inch from the root. Tear them into bite-sized bundles and rinse in cold water before draining well.
- Blanch the enoki mushrooms in boiling water for about 1 minute each, until they soften slightly. Drain and set aside.
- Heat oil in a small saucepan over medium heat. Add minced garlic and sauté for approximately 10 seconds, careful not to let it brown.
- Stir in the light soy sauce, sugar, and chopped scallions, bring to a gentle boil, then turn off the heat.
- Pour the sauce over the blanched enoki mushrooms and gently toss to coat evenly. Serve immediately.
