Ingredients
- 8 large flour tortillas
- 10 large eggs
- 1/4 cup milk or cream (optional)

- 12 ounces breakfast sausage
- 1 1/2 cups shredded cheddar cheese
- Optional: 1 cup sautéed bell peppers, onions, or spinach
Instructions
- In a skillet over medium heat, cook and crumble the breakfast sausage until browned and fully cooked. Drain any excess grease and set aside to cool slightly.
- In a large bowl, whisk the eggs with milk or cream (if using), salt, and pepper.
- Melt butter or heat oil in a nonstick skillet over medium-low heat. Pour in the eggs and gently stir with a spatula until just set and still soft. Remove from heat.
- Warm each flour tortilla for 10–15 seconds in a dry skillet or microwave to make them pliable and prevent tearing.
- Lay a warmed tortilla flat and layer scrambled eggs, cooked sausage, and shredded cheddar cheese down the center. Add any optional sautéed vegetables if desired.
- Fold in the sides of the tortilla, then roll tightly from the bottom up.
- To enjoy immediately, place the burrito seam-side down in a skillet and toast for 1–2 minutes per side until golden and crispy.
- To freeze, let the assembled burritos cool completely. Wrap each one tightly in plastic wrap, then in aluminum foil, and place in a freezer-safe bag.
- To reheat frozen burritos, remove from foil and plastic wrap. Microwave for 2–3 minutes, flipping halfway through. For a crispy exterior, finish in a skillet or toaster oven for an additional 2–3 minutes.
