Description

A remarkable creation bridging sweet indulgence and savory sophistication, this no-bake Chocolate Beef Salami is a unique delicacy. It’s a bold dessert that mimics a cured meat product, offering an unparalleled gastronomic experience with deep dark chocolate notes, biscuit crunch, and nutty richness.

Ingredients

Scale
  • 200g High-Quality Dark Chocolate (60-70% cocoa solids)
  • 200g Unsalted Butter, room temperature
  • 1/2 cup Condensed Milk
  • 1/3 cup Dulce de Leche
  • 1/2 cup Cacao Powder
  • 1 Teaspoon Pure Vanilla Extract
  • Pinch of Fine Sea Salt
  • 1 lb Biscuit Cookies (e.g., Digestive or Rich Tea), crushed
  • 1 cup Pecans, chopped
  • 2–3 Tablespoons Strong Coffee (optional, for flavor)
  • Powdered Sugar and/or Cocoa Powder, for dusting

Instructions

  1. Melt 200g dark chocolate using a double boiler or microwave. Let cool slightly.
  2. In a separate bowl, cream 200g softened butter with 1/2 cup condensed milk and 1/3 cup dulce de leche until light and fluffy.
  3. Gradually mix the slightly cooled melted chocolate into the creamed butter mixture. Sift in 1/2 cup cacao powder and pinch of salt. Add 1 tsp vanilla extract and 2-3 tbsp strong coffee (optional). Mix until smooth.
  4. Crush 1 lb biscuit cookies into varied pea-sized to half-inch chunks. Coarsely chop 1 cup pecans.
  5. Fold crushed biscuits and chopped pecans into the chocolate mixture until fully coated and stiff.
  6. Chill mixture for 15-20 minutes in the refrigerator to firm slightly for easier handling.
  7. Lay out a large piece of cling film or parchment paper on a clean work surface.
  8. Spoon the mixture onto the center of the wrap and form into an 8-10 inch log, 2-2.5 inches in diameter. Tightly roll and compress the log within the wrap to create a firm, even cylinder. Twist ends to seal. For best shape, consider placing the wrapped log in a paper towel tube while chilling.
  9. Refrigerate for a minimum of 4-6 hours, ideally overnight, until thoroughly firm and dense.
  10. Unwrap the chilled salami. Roll it in powdered sugar, or a mix of powdered sugar and cocoa powder, to coat completely for a traditional look. Slice into 1/4 to 1/2 inch thick rounds and serve.
