Ingredients

  • 1 package Chocolate Graham Crackers
  • 6 tablespoons Melted Butter
  • 2 tablespoons Sugar
  • 1 tablespoon Unflavored Gelatin
  • 2 tablespoons Cold Water
  • 1 cup White Chocolate Chips
  • 1 cup Milk
  • 3 tablespoons Powdered Sugar
  • 1 cup Heavy Whipping Cream
  • 1 teaspoon Pure Peppermint Oil
  • 1 cup Heavy Whipping Cream
  • 6 ounces Bittersweet or Dark Chocolate
  • 2 tablespoons Light Corn Syrup
  • 2 tablespoons Very Warm Water

Instructions

  1. Preheat your oven to 350°F (175°C). Combine the ground chocolate graham crackers, melted butter, and sugar in a bowl. Press the mixture firmly into a 9.5″ tart pan. Bake for 10 minutes, then let it cool on the rack for 15 minutes.
  2. Bloom the gelatin in cold water for 5 minutes. Gently dissolve it in the microwave. Melt the white chocolate and mix it with heated milk, gelatin, and peppermint oil until smooth. Let it cool below 85°F. In another bowl, whip the heavy cream with powdered sugar to medium-stiff peaks, then gently fold this into the chocolate mixture.
  3. Pour the mousse into the cooled crust, smoothing the top with a spatula. Refrigerate for at least 4 hours or overnight until the mousse is set.
  4. Once the mousse has set, bring the cream to a boil and mix in the chopped bittersweet or dark chocolate until you achieve a smooth consistency. Stir in corn syrup and warm water until combined.
  5. Carefully pour the glaze over the mousse tart, tilting to ensure even coverage. Allow it to set at room temperature for about 1 hour.
  6. This delightful tart is best enjoyed the same day it’s made, but can be stored covered in the refrigerator for 3-4 days.
