Description

A refreshing Cucumber Caprese Salad recipe featuring crisp cucumber, juicy tomatoes, fresh mozzarella, and a simple balsamic marinade. This easy and quick salad is perfect for a light lunch or side dish.

Ingredients

Scale
  • For the marinade:
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • Pinch salt
  • Pinch pepper
  • For the salad:
  • 1 cucumber, peeled, fork-scored, and thinly sliced, then diced
  • 1½ cups cherry tomatoes, cut into quarters
  • 8 oz fresh mozzarella
  • ½ large red onion, chopped into small pieces
  • Optional: fresh basil leaves

Instructions

  1. Prepare the Marinade: In a small bowl, mix together 2 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 tablespoon dried oregano, 1 tablespoon dried basil, a pinch of salt, and a pinch of pepper. Stir until well combined. Set aside.
  2. Prepare the Vegetables: Peel a washed cucumber. Use a fork to score the skin. Slice the cucumber thinly and dice it into small pieces. Place the diced cucumber in a medium-sized bowl.
  3. Add the Tomatoes and Onion: Quarter 1½ cups of cherry tomatoes and add them to the bowl with the diced cucumbers. Thinly slice and dice ½ large red onion and add it to the bowl. Omit onion if preferred.
  4. Add the Mozzarella: Slice 8 oz of fresh mozzarella into bite-sized pieces or use mozzarella balls. Add the mozzarella to the bowl with the other ingredients.
  5. Combine and Marinate: Pour the prepared marinade over the salad ingredients. Mix everything well, ensuring the marinade coats all ingredients evenly. Allow the Cucumber Caprese Salad to sit for 10 minutes before serving.

Notes

  • Fresh basil leaves can be added for extra flavor and aroma.
  • If you prefer not to use onion, simply omit it from the recipe.
  • Mozzarella balls can be used as an alternative to sliced fresh mozzarella.
