- 1 medium head napa cabbage (about 2 pounds), finely shredded
- 2 cups purple cabbage, thinly sliced
- 1 large carrot, julienned into matchsticks
- 1 red bell pepper, cut into thin strips
- 4 green onions, thinly sliced on the diagonal
- 1/2 cup fresh cilantro leaves, roughly chopped
- 1/4 cup toasted sesame seeds (white or black)
- 1/2 cup roasted peanuts, roughly chopped (optional)
- 3 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce (low-sodium preferred)
- 1 tablespoon honey
- 1 teaspoon fresh ginger, finely grated
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 tablespoon tahini
Instructions
- Slice the napa cabbage thinly, salt lightly, and let sit for 5 minutes to draw out moisture.
- Julienne the carrot and slice the purple cabbage and bell pepper.
- Whisk together sesame oil, rice vinegar, soy sauce, honey, ginger, garlic, red pepper flakes, and tahini in a bowl.
- Drain excess liquid from cabbage and pat dry. Add all vegetables to the bowl.
- Pour dressing over the vegetables and toss gently.
- Sprinkle sesame seeds and peanuts over the slaw, toss, and taste for seasoning.
Notes
- For a vegan option, substitute maple syrup for honey.
- You can prep the vegetables ahead of time and store them properly.
- Marinating for 30 minutes enhances the flavor.
