  • 2 lbs beef chuck roast
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) can diced tomatoes and green chilies (like Rotel), undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 packet taco seasoning
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup beef broth
  • Salt and pepper to taste
  • Corn or flour tortillas
  • Chopped cilantro
  • Diced onion
  • Lime wedges
  • Salsa
  • Guacamole
  • Sour cream
  • Shredded cheese
  • Pickled onions

Instructions

  1. Season the beef chuck roast generously with salt and pepper.
  2. Sear the roast on all sides in a skillet with olive oil until browned (optional).
  3. Place chopped onion and minced garlic in the bottom of the crock pot.
  4. Add the undrained diced tomatoes and green chilies and diced green chilies.
  5. Sprinkle in taco seasoning, cumin, chili powder, smoked paprika, and cayenne pepper (if using).
  6. Place the beef roast on top of the ingredients in the crock pot.
  7. Pour beef broth over the roast.
  8. Cover and cook on low for 8-10 hours or on high for 4-5 hours until tender.
  9. Remove the beef from the crock pot and shred it using two forks.
  10. Return the shredded beef to the crock pot and stir into the sauce.
  11. Simmer for another 30 minutes to an hour if the sauce needs thickening.
  12. Warm corn or flour tortillas according to package directions.
  13. Spoon shredded beef into warm tortillas.
  14. Top with your favorite taco toppings like cilantro, onion, lime, salsa, or guacamole.
  15. Serve immediately.

  • Adjust chili powder and cayenne pepper for spice level.
  • Chuck roast is recommended, but brisket or sirloin tip roast also work.
