Ingredients

  • 1 cup Whole Kernel Corn (Omit for low-carb or substitute with bell peppers.)
  • 4 cups Beef Broth (Use low-sodium for less salt.)
  • 1 medium Onion (Shallots can be used as a milder substitute.)
  • 2 cloves Garlic (Freshly minced is preferred.)
  • 2 tbsp Taco Seasoning (Use homemade for precise spice control.)
  • 1 tbsp Ranch Seasoning (Adjust amount for milder flavor.)
  • to taste Salt

  • 1 tbsp Olive Oil (Can replace with non-stick spray.)
  • 1 cup Shredded Cheese (Choose your favorite type.)
  • 1 cup Sour Cream (Perfect for balancing spicy flavors.)

Instructions

  1. Sauté Aromatics: Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, cooking for about 3-4 minutes until softened.
  2. Brown Beef: Add ground beef to the skillet, breaking it apart as it cooks. Drain excess fat.
  3. Combine Ingredients: Pour the beef mixture into the crock pot, followed by pinto beans, black beans, diced tomatoes, corn, and beef broth. Stir gently to combine.
  4. Add Seasonings: Sprinkle in taco seasoning and ranch seasoning, mixing well until evenly coated.
  5. Slow Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  6. Taste and Adjust: About 30 minutes before serving, taste the soup and season with salt and pepper as needed.
  7. Serve: Ladle soup into bowls and garnish with optional toppings.
