Crispy Garlic Skillet Potatoes are a simple and flavorful side dish made with thinly sliced Yukon Gold potatoes. They are cooked to golden perfection in a cast iron skillet, infused with garlic, herbs, and a touch of Parmesan.

- 2 lbs Yukon Gold potatoes
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 425°F (220°C).
- Slice potatoes evenly into 1/8-inch rounds using a mandoline or sharp knife.
- Heat olive oil in a large oven-safe skillet over medium heat.
- Add minced garlic and sauté for 1–2 minutes until fragrant, then stir in thyme and rosemary.
- Turn off heat and begin layering the potatoes in a circular pattern, overlapping slices.
- Season each layer with salt, pepper, and Parmesan cheese.
- Once all potatoes are layered, cover skillet with a lid and cook on medium heat for 10–12 minutes.
- Transfer skillet to preheated oven and roast uncovered for 20–25 minutes until top is golden and edges are crispy.
- Remove from oven and allow to rest for 5–10 minutes before serving.
- Optional: Garnish with fresh parsley or additional Parmesan.
