- 4 medium Yukon Gold or Russet Potatoes (Sliced thinly)
- 1/4 cup Balsamic Vinegar
- 1/4 cup Olive Oil (Or avocado oil)
- 2 tablespoons Fresh Thyme (Or dried thyme, reduced amount)
- 1 teaspoon Salt (Adjust according to taste)
- 1/2 teaspoon Black Pepper (Optional)
- 2 cloves Garlic (Minced; fresh preferred)
- 1 cup Mozzarella Cheese (Optional)
- 2 sprigs Fresh Thyme (For garnishing)
Instructions
- Preheat the oven to 400°F (200°C) and grease a 9-inch round baking dish.
- Slice the potatoes thinly, about ⅛ inch thick, using a mandoline or sharp knife.
- Mix together balsamic vinegar, olive oil, minced garlic, fresh thyme, salt, and black pepper in a large bowl.
- Toss the sliced potatoes in the marinade until they’re evenly coated.
- Layer the marinated potatoes in the prepared pan, creating overlapping circles until filled.
- Add mozzarella cheese between some layers, if desired.
- Cover the dish with foil and bake for 45 minutes.
- Uncover and bake for an additional 30 minutes until crispy and golden on top.
- Cool the torte for 15 minutes before slicing.
- Serve the torte carefully inverted onto a plate.
