  • 1 medium Yellow Onion, diced
  • 2 cloves Garlic, minced
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Worcestershire Sauce
  • 2 cups Beef Broth, low sodium
  • 1 package Refrigerated Cheese Tortellini
  • 1 cup Sour Cream, full-fat
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Black Pepper, to taste
  • 2 tablespoons Fresh Parsley, chopped

Instructions

  1. Prepare Ingredients: Dice 1 medium yellow onion and mince 2 cloves garlic. Ensure 1 cup sour cream is at room temperature.
  2. Brown Beef: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add 1 lb ground beef, breaking it up, and cook until browned. Drain excess fat. Season with salt and pepper. Remove beef and set aside.
  3. Sauté Aromatics: Reduce heat to medium. Add diced onion to the skillet and cook for 5-7 minutes until softened and translucent. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Build Sauce: Gradually whisk in 2 cups beef broth, 1 tbsp Worcestershire sauce, and 1 tbsp Dijon mustard. Bring to a simmer, stirring, and let thicken slightly, about 5 minutes.
  5. Incorporate Creams: Remove skillet from heat. Stir in 1 cup room temperature sour cream until smooth and velvety. Return to low heat, just to warm, but do not boil.
  6. Return Beef: Gently fold the browned ground beef back into the creamy sauce. Stir to coat and warm through on low heat for a couple of minutes.
  7. Cook Tortellini: While sauce is warming, bring a large pot of salted water to a rolling boil. Add 1 package refrigerated cheese tortellini and cook according to package directions until al dente. Drain well.
  8. Combine & Finish: Add the hot, drained tortellini directly into the skillet with the beef stroganoff sauce. Gently toss everything together until beautifully coated. Taste and adjust seasoning (salt, pepper). Warm together for 1-2 minutes.
  9. Serve: Garnish generously with 2 tbsp fresh chopped parsley. Serve immediately.
