- 1 pound Italian turkey sausage, casings removed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can chicken broth
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup sour cream
- 1/4 cup milk
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (16 ounce) package frozen pierogies (cheddar or potato and onion), thawed
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- In a large skillet or Dutch oven over medium heat, brown the Italian turkey sausage, breaking it up with a spoon. Cook for 7-10 minutes until browned and cooked through.
- Remove the sausage from the skillet and set aside. Add the chopped onion to the skillet (do not drain the grease) and cook until softened and translucent, about 5-7 minutes.
- Add the minced garlic to the skillet and cook for another minute until fragrant.
- Melt the butter in the skillet with the onions and garlic. Sprinkle the flour over the butter and cook, stirring constantly, for 1-2 minutes to create a roux.
- Gradually whisk in the chicken broth until smooth, then stir in the condensed cream of mushroom soup. Bring to a simmer, stirring occasionally.
- Stir in the sour cream, milk, dried thyme, salt, and pepper. Reduce heat to low and simmer for 5 minutes, stirring occasionally.
- Return the cooked sausage to the skillet. Add the thawed pierogies and gently stir to coat everything evenly with the creamy sauce.
- Pour the mixture into a greased 9×13 inch baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly and the pierogies are heated through.
- Remove from the oven and let rest for 5-10 minutes before serving.
- Garnish with chopped fresh parsley before serving.
